Bees collect nectar from different flowers depending on the region and season. The composition of that nectar directly influences the final product, determining its flavor, aroma, and color. Some of the key factors that define a honey's profile are:
Geographical area
Altitude, climate, and soil affect the quality of the nectar and, therefore, the honey's profile. Mountain honeys tend to be denser and darker, while those from coastal areas are usually lighter and milder.
Harvesting period
The season in which honey is collected also influences its properties, as blooms vary in aroma and composition depending on the time of year. Furthermore, honey collected in spring tends to have more floral nuances, while late summer honeys have more intense flavors.
Composition of nectar
Some flowers produce nectars with higher mineral or antioxidant content, which influences the nutritional properties of honey.
