Ximo Martínez PrimoAt Miel Mayem, we've been selecting artisanal honeys of national origin for generations. Each variety we offer has its own unique character, and today I want to tell you about one that stands out for its intensity, aroma, and connection to the land: Chestnut honey .
This honey is collected between May and July in the chestnut forests of the northwest of the Iberian Peninsula, mainly in Galicia and also in some southern areas, such as Andalusia.
It's a wild-flowering honey with a very distinctive profile: a dark amber color with greenish hues , an intense floral aroma , and a flavor that blends sweet and savory notes. A contrast that makes it one of the most surprising and authentic honeys we offer.
This is how we work with Chestnut honey from Miel Mayem
At Miel Mayem, we select this honey directly from flowering areas, such as the forests of Galicia and the southern Iberian Peninsula, and we package it by hand in our facilities.
Natural honey is gently heated in a double boiler to achieve a more fluid texture. Raw chestnut honey is spoon-packed directly from the drum into the jar. This preserves its denser texture and natural state, just as it comes from the honeycomb.
Both options maintain their characteristic dark color, complex flavor, and that slightly salty touch that makes them stand out among other honeys.
How can you integrate it into your daily life?
Natural Chestnut honey is especially popular with those who are already familiar with other honeys and are looking for something different, deeper, and with more nuances.
Its flavor pairs well with aged cheeses, sourdough breads, nuts, natural yogurts, or even meat dishes. It's an ideal honey to savor, to stop and enjoy.
It's also common in traditional mountain recipes or in areas where chestnuts play an important role in local culture. Therefore, consuming this honey is also a way to experience those landscapes and that lifestyle.
But there's no need to complicate things. A slice of bread with a little cured or semi-cured cheese and a spoonful of Chestnut honey is enough to appreciate everything it offers. You can also use it as part of a cheese board or in a homemade vinaigrette, mixing it with olive oil and a good vinegar.
Do you know how to preserve it?
Like all our honeys, Chestnut honey should be stored in a cool, dry place, away from direct light and heat sources. It does not require refrigeration, and its shelf life is up to two years if stored properly.
