
Mountain honey, intense flavor born at altitude

In these natural settings, where the climate is cooler and the vegetation wilder, bees work to collect nectar from a variety of wild species. The result is a complex honey with a profound flavor and unique aromatic profile: Mountain honey .
At Miel Mayem, we select this honey directly from mountainous areas in the northern peninsula, such as Burgos, where it is harvested during the summer months.
What is mountain honey like?
Mountain honey is a multifloral honey, but very distinctive. Its very dark amber color already gives us a clue of what we're about to find: an intense, vibrant product. Its floral aroma with fruity notes is warm and persistent, and its flavor is sweet, yet with slightly salty and acidic nuances that give it a special depth.
This type of honey is made from the nectar of various wild species that grow spontaneously in high altitudes: heather, chestnut, oak, blackberry, and many other plants that only thrive at altitude. The balance of these blooms is what gives it its unique profile, different from other lighter or monofloral honeys.
Our varieties of mountain honeys
At Miel Mayem we offer two varieties of this honey to suit different consumption methods:
- Natural mountain honey : It has a more fluid texture, ideal if you like smooth honey. We process it using traditional methods, respecting its original properties.
- Raw mountain honey : This is what we pack directly from the drum to the jar, using a spoon. It has a denser texture.
Both honeys share a common origin and quality. Whichever you choose, both are selected with the highest quality, packaged by hand, and guaranteed to be 100% Spanish artisanal honey.

How to properly store Mayem Mountain Honey honey?
To preserve all its properties, simply store mountain honey in a cool, dry place, away from direct sunlight. If it crystallizes over time, don't worry: it's a natural process that doesn't affect its flavor or value. You can restore its texture if needed by gently heating it in a double boiler, although many prefer to enjoy it as is, especially raw.
